As new parents, Gregory and I don’t have a lot of time to make gourmet meals in the kitchen. Plus, we’re trying this whole “eating healthy” thing and we need recipes to be as simple as possible while also not tasting like cardboard.
Baked chicken is a go-to in our house because it’s simple and happy on the waistline. I came across the original recipe for this dish on Pinterest but added my own twist to it with garlic.
The baked lemon garlic chicken came out delicious and super juicy. This would be a great entree to use for weekly meal prep too!
WHAT Y’ALL NEED
4 boneless skinless chicken breasts (approx. 1 lb)
3 tablespoons butter
⅓ cup chicken broth
4 tablespoons fresh lemon juice (approx. 2 lemons)
1 tablespoon honey
1 tablespoon minced garlic
salt + pepper to taste
optional: fresh rosemary or lemon slices for garnish
Preheat oven to 400 degrees and grease a baking sheet or large glass casserole dish.
Melt butter in a large skillet over medium-high heat. Add chicken and cook chicken 2-3 minutes on each side just until browned. Don’t overcook because you don’t want the chicken to dry out after baking. Transfer chicken to prepared baking sheet or dish.
In a small bowl whisk together chicken broth, lemon juice, honey, garlic, and salt + pepper.
Pour sauce over chicken. Bake 20-30 minutes until chicken is cooked through. Every 5-10 minutes spoon the sauce from the pan over the chicken. This is important so the juices soak in.
Garnish with lemon slices and serve. ENJOY!
I served with balsamic roasted brussel sprouts and garlic couscous and it was the perfect flavor combos.
